Quail eggs cook in a fraction of the time chicken eggs need — two minutes for soft, four and a half for hard. Getting it wrong by a minute ruins them.

How long to boil quail eggs

A quail egg is about a third the size of a chicken egg, so heat reaches the yolk much faster. Timed from the moment they enter already boiling water:

  • Soft boiled: 2 minutes
  • Medium / jammy: about 3 minutes
  • Hard boiled: about 4 minutes 30 seconds

The two- and four-and-a-half-minute figures are the well documented anchors; three minutes sits between them for a jammy centre. Because the whole range is barely two and a half minutes wide, guessing really does not work here.

Method

  1. Bring the water to a rolling boil first. Starting quail eggs in cold water almost guarantees overcooking, because they are done before the water even boils.
  2. Lower them in gently with a spoon — the shells are thin and chip easily.
  3. Add an eighth of a teaspoon of white vinegar or baking soda for easier peeling.
  4. Move them straight into cold water when the timer goes off.

Peeling quail eggs

This is the fiddly part. The shell is delicate but the membrane underneath is surprisingly tough, so cracking the shell alone often is not enough. Roll each egg under light pressure to craze the shell all over, then start peeling at the fat end where the air pocket sits, working under cool running water.

Substituting for chicken eggs

Roughly three to four quail eggs equal one chicken egg by volume. They are most often used whole as a garnish, in salads, or as a bite-sized snack, where their size is the point rather than an inconvenience.
