How long to boil eggs for hard boiled

A properly hard boiled egg has a fully set, pale yellow yolk that is crumbly rather than chalky, and a white that is firm without being rubbery. For a large egg, boil for 12 minutes at a rolling boil.

Twelve minutes is deliberately not fifteen. Overcooking is what produces the grey-green ring around the yolk and the faintly sulfurous smell that comes with it, and it is the most common mistake with hard boiled eggs. Avoiding the green ring

The ring is iron sulfide — a harmless reaction between sulfur in the white and iron in the yolk that accelerates with heat and time. It is not a food safety issue, only a cosmetic and flavour one. Two things prevent it: do not exceed the times above, and move the eggs into ice water the moment the timer goes off. Eggs left to cool slowly in their hot cooking water keep cooking for several minutes after the heat is off.

Peeling hard boiled eggs

Very fresh eggs are notoriously difficult to peel because the membrane clings to the white. Eggs that are 7 to 10 days old peel far more cleanly. Beyond that:

  • Chill thoroughly — at least 10 minutes in ice water for the easiest peeling.
  • Crack the shell all over, then start at the fat end where the air pocket sits.
  • Peel under a thin stream of cool running water to float the shell off the membrane.
